Wine making process
For the elaboration of this wine, we choose the harvest dates according to the optimum ripening point of each variety and its location in the appellation. The grapes are harvested by hand to ensure the best treatment of our clusters. Fermentation in stainless steel tanks, 20 days of maceration and 4-5 daily manual pumping over. Malolactic fermentation in concrete and subsequent aging in French oak barrels for 12 months. Subsequent resting in concrete tanks and bottle rack for at least 12 months.
